Texas Tuxedos to Tacos

Chocolate Cherry Surprises

  • 40 Maraschino cherries, well-drained
  • 1/4 cup brandy
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 cup flour
  • Soak the cherries overnight in brandy.
Glaze
  • 6 oz. semisweet chocolate chips
  • 2 T. water
  • 1/4 cup light corn syrup
Preheat oven to 350 degrees.

Cream the butter, powdered sugar, vanilla and almond extracts. Add the flour, mixing on low speed until fully combined. Drain cherries then wrap 1 tsp. of dough around each cherry, covering completely. Place on a cookie sheet and bake for 8 to 10 minutes or until lightly browned. Cool on wire racks. While the cookies are baking, heat glaze ingredients in a double boiler until the chips are melted and the sauce is smooth. Place wax paper beneath cookie racks. Spoon the glaze over each cookie and allow to cool completely. Yields 40 cookies.
